Healthy Vegan Carrot Apple Muffins

These vegan carrot apple muffins are a tasty and healthy way to start the day. Whole wheat flour, grated apple and carrot, and a little maple syrup for sweetness are used to make them. You can grab them to go for breakfast or as a tasty snack.

Ingredients:

  • 1 1/2 cups whole wheat flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 cup unsweetened applesauce
  • 1/2 cup maple syrup
  • 1/4 cup almond milk
  • 1 tsp vanilla extract
  • 1 cup grated carrots
  • 1/2 cup grated apple
  • 1/3 cup chopped walnuts or pecans optional

Instructions:

Preheat the oven to 350F 175C and line a muffin tin with paper liners

In a large bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon

In a separate bowl, mix the applesauce, maple syrup, almond milk, and vanilla extract

Add the wet ingredients to the dry ingredients and mix until just combined

Fold in the grated carrots, grated apple, and chopped nuts if using

Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full

Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean

Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely
