Ingredients:
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- Salt and black pepper to taste
- 2 large onions, thinly sliced
- 2 cloves garlic, minced
- 2 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 cup shredded Gruyere cheese
Instructions:
Preheat the oven to 375F 190C
Season the chicken breasts with salt and black pepper
Heat olive oil in an oven-safe skillet over medium-high heat
Add the chicken breasts and cook until browned on both sides, about 4 minutes per side
Remove chicken from the skillet and set aside
In the same skillet, add sliced onions and garlic
Cook until onions are caramelized, about 10 minutes
Pour in beef broth and Worcestershire sauce
Add dried thyme
Stir to combine
Return the chicken breasts to the skillet, nestling them into the onion mixture
Transfer the skillet to the preheated oven and bake for 20-25 minutes or until chicken is cooked through
During the last 5 minutes of baking, sprinkle shredded Gruyere cheese over the chicken breasts
Once cheese is melted and bubbly, remove from oven
Serve hot, spooning onion mixture over the chicken
