Ingredients:
- 1 large onion, thinly sliced
- 2 tablespoons butter
- 4 slices of bread
- 8 slices of cheese cheddar or Swiss
- Salt and pepper to taste
Instructions:
In a skillet, melt 1 tablespoon of butter over medium heat
Add thinly sliced onions to the skillet and cook until caramelized, stirring occasionally, about 10-15 minutes
Remove caramelized onions from the skillet and set aside
Spread remaining butter on one side of each bread slice
On the non-buttered side of two bread slices, layer 2 slices of cheese, then top with a generous portion of caramelized onions
Top each with another slice of bread, buttered side facing out
Place sandwiches in the skillet over medium heat and cook until golden brown on both sides and cheese is melted, about 3-4 minutes per side
Remove from skillet, slice if desired, and serve hot
