Open Face Rye Sandwich with Creamy Chicken and Apple Salad



There is a creamy dressing that holds this open-faced rye sandwich together. The shredded chicken and diced apple make it taste delicious. It's a great choice for a light lunch or snack because the textures and tastes are just right.

Ingredients:

  • 2 slices rye bread, toasted
  • 1 cup cooked chicken breast, shredded
  • 1/2 cup diced apple
  • 2 tablespoons mayonnaise
  • 1 tablespoon Greek yogurt
  • 1 teaspoon Dijon mustard
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

Apple dices, mayonnaise, Greek yogurt, Dijon mustard, lemon juice, salt, and pepper should all be mixed together in a bowl

Well mix until coated all over

Spread the chicken and apple salad mixture out evenly on the rye bread slices that have been toasted

Add fresh parsley leaves as a garnish

Serve right away and enjoy!
