Strawberry Shortcake Crepes are a fun take on a traditional dessert. You can eat these thin crepes for breakfast or dessert because they are filled with fresh strawberries and rich whipped cream.
Ingredients:
- 1 cup all-purpose flour
- 2 tablespoons granulated sugar
- 1/2 teaspoon salt
- 2 cups whole milk
- 2 large eggs
- 2 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
- 2 cups fresh strawberries, hulled and sliced
- 1 cup whipped cream
- Powdered sugar for dusting
Instructions:
Mix the flour, sugar, and salt together in a bowl using a whisk
Put the milk, eggs, melted butter, and vanilla extract in a different bowl
As you keep whisking, slowly add the wet ingredients to the dry ones until the batter is smooth
Put a nonstick skillet on medium heat and use cooking spray or butter to lightly coat it
Put a little of the crepe batter into the pan and swirl it around to cover the bottom evenly
It will start to lift around the edges after about two minutes of cooking
The crepe should be carefully turned over and cooked for another one to two minutes on the other side, until golden brown
Do it again with the rest of the batter, stacking the crepes on a plate and putting a clean kitchen towel over them to keep them warm as you go
To put the crepes together, put some whipped cream and fresh strawberry slices in the middle of each one
Roll them up by folding the sides over the filling
Sprinkle powdered sugar on top of the Strawberry Shortcake Crepes and serve right away
