Minty Mojito



A classic cocktail that is sure to cool you down with a burst of mint and lime flavors.

Ingredients:

  • 2 oz white rum
  • 1 oz fresh lime juice
  • 3/4 oz simple syrup
  • 6-8 fresh mint leaves
  • Club soda, to top

Instructions:

In a glass, muddle mint leaves with lime juice and simple syrup

Fill the glass with ice cubes

Add white rum and stir well

Top up with club soda

Garnish with a mint sprig

Enjoy!

Ultimate Thanksgiving Turkey Club



This tasty sandwich uses up leftover turkey by combining traditional Thanksgiving flavors with a club sandwich twist.

Ingredients:

  • 3 slices leftover Thanksgiving turkey
  • 2 slices cooked bacon
  • 2 slices sandwich bread
  • 2 lettuce leaves
  • 2 tomato slices
  • 2 tablespoons mayonnaise
  • 1 tablespoon cranberry sauce
  • 1 teaspoon Dijon mustard

Instructions:

Toast the sandwich bread slices until golden brown

Spread mayonnaise on one side of each bread slice

Layer one lettuce leaf, one tomato slice, and one slice of bacon on one bread slice

Spread cranberry sauce on the other bread slice

Layer two slices of turkey on top of the bacon

Spread Dijon mustard on the remaining bread slice

Place the second bread slice with cranberry sauce and the third bread slice with mustard on top of the turkey to form a sandwich

Secure the sandwich with toothpicks and cut it diagonally into halves

Oatmeal Cookies

Ingredients:

  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup raisins or chocolate chips optional

Instructions:

Preheat the oven to 350F 175C and line a baking sheet with parchment paper

In a bowl, whisk together the oats, flour, baking soda, cinnamon, and salt

In a separate large bowl, cream together the butter, brown sugar, and granulated sugar until smooth

Beat in the egg and vanilla extract until well combined

Gradually add the dry ingredient mixture to the wet ingredients, mixing until just incorporated

If desired, fold in the raisins or chocolate chips

Scoop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart

Flatten each cookie slightly with the back of a spoon

Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown

Remove from the oven and allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely

Strawberry Shortcake Crepes



Strawberry Shortcake Crepes are a fun take on a traditional dessert. You can eat these thin crepes for breakfast or dessert because they are filled with fresh strawberries and rich whipped cream.

Ingredients:

  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1/2 teaspoon salt
  • 2 cups whole milk
  • 2 large eggs
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 2 cups fresh strawberries, hulled and sliced
  • 1 cup whipped cream
  • Powdered sugar for dusting

Instructions:

Mix the flour, sugar, and salt together in a bowl using a whisk

Put the milk, eggs, melted butter, and vanilla extract in a different bowl

As you keep whisking, slowly add the wet ingredients to the dry ones until the batter is smooth

Put a nonstick skillet on medium heat and use cooking spray or butter to lightly coat it

Put a little of the crepe batter into the pan and swirl it around to cover the bottom evenly

It will start to lift around the edges after about two minutes of cooking

The crepe should be carefully turned over and cooked for another one to two minutes on the other side, until golden brown

Do it again with the rest of the batter, stacking the crepes on a plate and putting a clean kitchen towel over them to keep them warm as you go

To put the crepes together, put some whipped cream and fresh strawberry slices in the middle of each one

Roll them up by folding the sides over the filling

Sprinkle powdered sugar on top of the Strawberry Shortcake Crepes and serve right away

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • 2 large onions, thinly sliced
  • 2 cloves garlic, minced
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 cup shredded Gruyere cheese

Instructions:

Preheat the oven to 375F 190C

Season the chicken breasts with salt and black pepper

Heat olive oil in an oven-safe skillet over medium-high heat

Add the chicken breasts and cook until browned on both sides, about 4 minutes per side

Remove chicken from the skillet and set aside

In the same skillet, add sliced onions and garlic

Cook until onions are caramelized, about 10 minutes

Pour in beef broth and Worcestershire sauce

Add dried thyme

Stir to combine

Return the chicken breasts to the skillet, nestling them into the onion mixture

Transfer the skillet to the preheated oven and bake for 20-25 minutes or until chicken is cooked through

During the last 5 minutes of baking, sprinkle shredded Gruyere cheese over the chicken breasts

Once cheese is melted and bubbly, remove from oven

Serve hot, spooning onion mixture over the chicken

Summer Corn Chowder

Ingredients:

  • 4 ears of corn, kernels removed
  • 4 slices of bacon, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 medium potatoes, peeled and diced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions:

Over medium heat, cook the bacon in a big pot until it gets crispy

Take the bacon out of the pot and set it aside

Leave the bacon fat in the pot

Put diced onion in the pot and cook for about 5 minutes, until it gets soft

Cut up some garlic and add it

Cook for one more minute

Add some diced potatoes and corn kernels and mix them in

Then add the chicken broth

Bring to a boil, then lower the heat and let it cook for about 15 to 20 minutes, until the potatoes are soft

Using an immersion blender, blend the soup until it has the consistency you want, but leave some chunks for texture

Add the heavy cream and thyme and mix them in

Serve hot with chopped parsley and crispy bacon on top

Loaded Breakfast Skillet

Ingredients:

  • 4 large eggs
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onions
  • 1/2 cup diced tomatoes
  • 1/2 cup diced cooked bacon
  • 1/2 cup shredded cheddar cheese
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions:

Put olive oil in a big skillet and heat it over medium-high heat
